Best pies I’ve ever had. I am generally not a fan of apple pies, however the brown sugar crumble apple pie is to die for. The toasted chocolate almond chess pie is my favorite. And lastly the chocolate pecan pie is a must try, my siblings were fighting over it. I’ve had 6 different pies and all of them were good. 10/10!!!

We have been patronizing Ashleigh’s since it opened in 2015. As a military family, we have had the privilege of traveling the world—and experiencing lots of different bakeries, many of whom offer pie. Hands down, this is the best pie we’ve had anywhere! Notably, Ashleigh’s pie crusts are exceptional. Her citrus pies (key lime and lemon meringue) are flawless and never taste “eggy”. (Avoiding that eggy flavor is a challenge that eludes even the most experienced bakers, but Ashleigh seems to get it right every time.) Her German chocolate pie is an unforgettable experience. And her blueberry basil goat cheese is an unexpected delight. (Trust us on this one, and just try it.) She has myriad pie flavors and other treats to suit any sugar-craving palate. The secret’s out though. It seems everyone in the KC metro area has heard of Ashleigh’s Bake Shop. It’s been thrilling to watch this small business boom into an established and well-known hot spot. It’s important to recognize that while popular, Ashleigh’s is still a small business with a very small staff. They often sell out early (especially on Saturdays), so plan your trip—call ahead, or get there early. You won’t be sorry. This place is a must-stop. The service is super friendly and fast. The pies are out of this world. We had the banana cream and the blueberry goat. I’m not even a big pie guy but I could eat these pies every day for the rest of my life and be happy

Please don't go here...before me and take all the baked treats! LOL, seriously this place is the best. I make a special trip 30 mins from home to grab a pie and whatever else looks good that day. I enjoy my baked goods but what makes Ashleigh's the best IMO is that the treats aren't overly sickeningly sweet. I only see that in specialty shops like this and you know it's quality. I'd buy the pie crust alone. I think this is one of KCs gems. You will not be disappointed!

Just tried my first ever Ashleigh's pie. It didn't disappoint!!! My husband and I tried to get a slice at Poppy's in Lee's Summit but they were sold out so we decided to just drive to Ashleigh's Bake Shop so we could try what everyone was raving about . We bought a berry patch pie . The crust was AMAZING!!!!! Honestly it was the best pie I have ever tasted. We will be back for more . So glad we found this bakery.

I had followed Ashleigh's Bakeshop on Instagram for a while and finally got the chance to give them a try, and omg they were absolutely AMAZING. The sweetest people I have ever met and the best pie I've ever had *chef's kiss*! I will for sure be coming back over and over again amd anyone reading this should too! So thankful to have the opportunity to support and be near a fantastic small business.

I happened to be in the right place at the right time and Ashleigh gave me a free banana cream pie. I'm not a fan of banana cream but wasn't gonna say no to a free pie. I'll cut to the chase... the pie was AMAZING!! Since then, I've been back to get multiple pies and every single pie has been DELICIOUS!! She bakes the best pies and is the sweetest person!! HIGHLY RECOMMEND

Awesome x45. I am a pie guy and her crusts on the fruit pies are damn near strudel. So good. Don’t get me wrong the gram cracker crusts are good too, but try that after your first few traditional crusts. Warning: do not get a pecan bar. Hella addictive. I compare every single pie slice I try against this place and they always win.

On our roadtrip from Pittsburgh back home to Colorado Springs, My partner and I stumbled across this wonderful bakery. Love the location!! We bought 4 different flavors and honestly can say these are some of the BEST pies we’ve ever had. You can taste the fresh ingredients in every bite. Homemade with love ❤️ I will absolutely drive back JUST to pick up a few pies! Can’t wait to try other flavors!!

Ordered a toasted chocolate almond chess pie about 48 hours in advance by text for my husband's birthday. It was super easy and convenient for me. The pie itself is divine. For the customer service, convenience provided and quality of the food I purchased, I am really happy. I'm sure I'll order again in the future.

We got the last whole pie the day before Easter. No surprise they sold out, absolutely delicious. Perfectly flakey crust and filling had great flavor. We will return for sure!

Every year for our anniversary we get a cherry pie like we had on our wedding day. It took us awhile but we found one just as good as that wonderful day. Ashleigh's Bakeshop is perfect in every way... Location, service, and of course pie!
