Love, love, love this place! The menu changes seasonally, and the food is always to die for! The service is always on point with a smile. Even when I've stopped in for some pastries, I have been delighted. A must! when in Hillsborough.

The atmosphere is good, the food is average, and the service is nonexistent. I thought the braised pork butt sandwich was a little overpriced at $17 dollars, but when you add on the mandatory 20% tip, the price became severely inflated. Hoping to get a little side with your $22 sandwich? Well, keep hoping because all you get is the sandwich. Here's the kicker, I fancy myself a good tipper, I worked in the service industry, but this place expects you to get your own water, napkins, silverware, and then to bus your own table when finished. Where's the service that warrants a 20% tip?? The entitlement of this page is absurd!!

The food is very good, but the service policy is an outrage. There is an automatic 20% charge added to each order so that everyone gets a living wage. For this charge, you stand in line while your order is being filled, take your food to the table, and buss your used dishes to a collection point. Perhaps the owners should consider paying a living wage and leave tipping to the customers.

I've been here several times to meet friends for a morning visit. I always get a nice pastry. You never know exactly what they'll have, but they are good and fresh. And the coffee is the best I've found in Hillsborough!

Food was ok. But this forced tip is soooo dumb. I had to get my own water. My own silverware. And bus my own table. All for me to pay a 20% tip. Not coming back. Your employer should pay you more. Not force me to pay for something I don’t get.

Canestri+ cacio e Pepe was a delicious lunch. This is a bus your own table place, and tips are included to pay their workers. So nice not to do math every bill. Only a few tables but full bar, canned beer and even coffee if you’re so inclined.

Hillsborough Bakeshop & Pasta is a pastry and pasta shop born in Aaron Vandemark's Panciuto space during the pandemic. I'm not sure whether Panciuto will return in its previous incarnation. HBP sells European and inventive American pastries, and serves a unique but (for now) limited menu of house-made pasta, sandwiches, and salads, and occasional soups, all based on locally-sourced products. Their menu constantly changes. Their servings are generous, and I always end up taking home at least half of my meal. At a recent visit, I had tagliatelle with asparagus, garlic cream, poached egg, prosciutto, chives, and breadcrumbs, garnished with tiny flowers. My dining companion had spaghetti with pork meatballs, tomato butter, basil, parmesan, and breadcrumbs. Both were excellent. Both dine-in and outdoor seating are available. As a living wage employer, HBP includes an 18% fair wage charge on every bill in lieu of a traditional gratuity.

In the six or so years since I ate here, I quit eating meat and dairy. So, I usually don’t eat out much anymore because I can do better at home and control the ingredients. We returned to dine outside at Panciuto’s after a long Pandemic hiatus. It was just as wonderful as we remembered. The staff greeted us with a small glass of Prosecco and explained the menu. While not a huge menu, it was hard to choose because all the items sounded delicious. After some great appetizers the pasta and gnocchi were terrific as was the dessert we split. The staff was wonderful and attentive and it was a truly great way to begin to return to normal. We look forward to returning soon.

This was by far the favorite restaurant for my wife and I, as well as friends that we would invite to join us. Then covid came and the restaurant closed. Not sure why there have been no reviews since their reopening. I give it a reserved five stars based on food but have a few quibbles that I did not want reflected in that rating. Getting them out of the way I can reflect on the food. First the new iPad ordering system needs to go. Yes, since I have been there twice I have it sort of mastered but still made mistakes. I go to dine not commune with an electronic device. It also leaves the staff to sort of pace the floor looking for something to do which becomes a distraction. The staff is great, know their food and willing to help in any way. A more straightforward serving approach however would provide a better experience. The atmosphere is decent but a bit sparse. I think redoing the luncheon area by at least removing the empty display case would help and table clothes to soften the hard wood look would be more inviting. I know, cost. Also, bar liquor selections need upgrading. But the greatness of this restaurant is in the food. Yes, it is an Italian restaurant but with a new inspiration - part local part international. Who would have thought to put bao buns with locally produced bologna on the menu. While I did not try them, they seemed quite popular. Who would think to put chicken livers in ravioli. Spouse an avowed liver hater had it and loved it and my tasting confirmed his opinion. Who would use rye spaghetti in place of the usual wheat or have pulled pork with pasta. Get the idea. Lots more on the menu but can only taste so much at a sitting. The point is that the chef expands our food horizon by building on something we know but throwing in something unexpected. Does it work all the time? I don’t know. Will I come back to see? Yes. And do please continue to do wonderful things with more exotic mushrooms. See you next time.

After taking a hiatus from Panciuto because of some not so stellar dining experiences I am happy to report that Aaron Vandemark is back to killing it at life. His combination of flavors keep me coming back for more and this time around, the cooking techniques were on point. The tomato gravy served with the clams was next level. PLEASE include this sauce on your menu in the future. My only complaint of the night was the lack of a proper espresso machine for an Italian joint but this place is by no means traditional. If you are looking for a nontraditional Italian restaurant look no further. The only other place I can compare Panciuto to is Gocciolina in North Durham. Both use farm to fork ingredients with the power to produce innovated dishes you have not tried before and dream about weeks after. The small menu changes every week, and the date is noted at the top of it, alongside the percentage of local, sustainable, and organic ingredients. The atmosphere is casual, the food is seriously good, and the prices are surprisingly reasonable. I took a friend of mine from Chicago to this restaurant thinking it would be a pleasurable experience. This is the second time I have gone.When I made the reservation, a week prior I inquired if there were Gluten free options. I was told there’s at least two dinners. I end up only be able to eat the appetizers of 13 oysters for dinner.I was very disappointed. The other options were all pasta, but there were no potatoes or rice on the menu. We had reservations for 7:30. Although we were a couple of minutes late, we were seated right away. Our waitress was very friendly and helpful. We were given a free sample of Prosecco to start. The restaurant offers a very limited selection of both appetizers and entrees, 5 or 6 of each. We were given complimentary sparkling white wine. The restaurant was also offering a flight of bourbons, which we passed on. We had the steamed buns appetizer with shrimp sausage, an excellent choice with a little zing. This was large enough to split. We ordered the spaghetti with pork meatballs mixed with arugula and bacon bits in a cheese sauce. The dish was plentiful, tasted good, the meatballs were easily cut with a fork however several strands of the pasta stuck together. IMHO this dish was significantly overpriced. We also had the clams and shrimp with shells. The chef was very liberal with the garlic which was fine, but the clams were overcooked- very rubbery and difficult to remove from their shell.

We were fortunate to be invited to a wedding dinner at Panciuto. It provided us with the opportunity to meet the owner/chef and come to understand why one has such a marvelous experience dining here. It also helped us to understand why the wait staff is so attentive....they love to work for their boss. The meal was served family style which afforded the chance to try many different creations. I will touch on a few. From the four selections in the first course, I liked the beef carpaccio with arugala delicately sliced and dressed with parsley aioli and pecorino; but I fell in love with the Buckwheat Crespelle, filled with herbed ricotta. All of offerings in the second course were outstanding and may be the reason I had to force myself to participate in the third course. Classic Roman canestri tossed with pepper pesto, arugala, fried fennel and tomatoes; Goat Cheese gnocchi with mushrooms, radishes and blurberry; Spigarello (not brocoli rabe), and Roasted Eggplant served with peppers and the sweet/sour agrodolce. The unbelievable third course included melt off the bone Pork Shank and Grilled Shrimp Sausage complemented with Arborio Rice (not risotto) grits, roasted beets, grilled carrots with rose syrup and pea shoots and cold cucumbers in a spicy chili rub.I can;t describe the griddle cakes with turnips, aioli and scallions....but it was out of this world. It all came to a glorious ending with a Grapefruit Panna Cotta. The wait staff served the food hot, kept the water glasses topped and wine glasses filled while filling special requests without missing a beat. I forgot to mention the ambiance....warm and cozy with a hammered copper bar and a great mixologist.. Oh how I wish I lived in Hillsborough.

It can be hard to find good seafood in this area. I grew up visiting my grandparents in Pine Knoll Shoes on the Southern Outer Banks, so we always got to experience wonderful fresh seafood. Living in the triangle is fabulous, but fresh seafood is hard to find. Everything is fabulous here. There is a wonderful appetizer that features a little but of everything. I highly recommend it. Calamari is not traditional but it is wonderful. Shrimp is fabulous, and their slaw is wonderful. You can get prosecco on tap! Who wouldn't love that? If you have room for dessert, they are always wonderful. This is a great local gem. Try it out! 😊

Panciuto. It is a restaurant I really do not know how to describe. The folks that own this place do not advertise and to me it was just another Italian restaurant. I was so surprised at the variety they have and also everything is either home made or home grown but it is all fresh......no frozen food warmed over here. The food is wonderful and I think I saw some Indian food on the menu. I will go again. I really liked this place. The staff is fantastic and will make you feel special and glad you are there.

Been looking for an Italian restaurant which makes their own fresh pasta, and finally found one. Our dinner was one of the best I have had in a long time, and even a few days later, we are still raving about it, which is the way it should be.
