Blown away by this place! Food and service was stellar! This is legit southern barbeque which is hard to find up north. Sam was amazing and on point. We had the pork sandwich, pimento cheese balls, duck fat fries and chicken wings. Got some IPAs to go, can't wait to come back! Well worth the 4.30 hour drive from the Cape for authentic southern barbeque! Bravo!

Stopped by this lovely spot on our trip to VT. It was cloudy and dreary but upon entering it felt cozy, lots and lots of ambiance here! The menu is smallish, but we did try the cornbread, fries, burger and brisket. All of them were AMAZING. The duck fat fries had a ridiculous amount of flavor, as did the burger and brisket! BBQ sauce options available. It was a bit pricey, a kids hotdog was $8 without side or drink, but I feel like the food was worth it. Would absolutely come back here again!

My husband and I were in Waterbury one afternoon during a day of travel on vacation. We had such a fantastic experience and were so happy to have stumbled upon the Pro Pig! Our server Amy took such great care of us and truly made our experience so delightful. Amy took the time to explain what the daily specials were and we ordered the special salad of the day - local romaine lettuce with cornbread crumbs, apples, chicken, and more. It was AMAZING! We both ordered meat plate entrees and the portion sizes were perfect. We were so happy and had such a great night. If we are ever in Vermont again, we are making the stop to Pro Pig! It was our first time eating at Pro Pig and it was legendary!!! I wish I lived in Vermont so I could go back more often! The duck fat fries were the highlight of the meal: they had such a unique and delicious flavour. The special mayo that came with the fries was also quite good. The ribs were so tender they would just melt in our mouths. The chicken wings were great. The BBQ sauces at the table were tasty and original. Our waiter Jacob was so sweet and explained everything on the menu to us. The music that was playing and the low lighting in the restaurant just made the whole experience THAT much better. SUCH a cool vibe!! Lots of love from a Montreal foodie!!

My stop at Pro Pig was unplanned, unexpected, and my first time stepping foot into Vermont. It was nearly impossible to leave Waterbury after the experience my family had at Pro Pig. I am realizing I’ve been missing out because I had no idea BBQ this great was available in Vermont. The brisket was tender and flavorful. The sauces were supreme. The pulled pork sandwich was just right. The pickled carrots were a surprise and delight moment. And the farmer’s salad? I’m still thinking about it (how often do you hear that about a salad?). Exceptional service, atmosphere, food, etc., all of it and everything. The location is on a fairytale-like street full of wonder and magic. The sun shines just so, and everything glows gold. It’s unreal. The patio at the brewery is perfectly positioned to sit and take it all in. Go here and stay as long as possible. I cannot wait to find my way back here.

I have been going to this restaurant for around ten years, previously The Alchemist. My last visit in August 2022, however, was a real disappointment. One of my old favorite restaurants has become a Quebec tourist trap. Adding poutine to the menu, and reducing the menu quite a bit. Before you had a whole plate with the chicken, now you have the chicken alone with a piece of pickle! You must order an extra fries for US$9. $9 a fries (in duck fat)? Yes, the pandemic hit and many have increased their prices but I found that the Pro-Pig was becoming unreasonably expensive for the price, unfortunately. It will no longer be my go-to in Vermont, I would much rather visit the Hen of the Wood at this price/quality. Plus their beer, let's face it, is quite far from the good brewers in Vermont. I will mourn this establishment that I loved so much.

The place was packed and we could not get a table, but the hostess suggested sitting at the last two seats at the bar. We did and had a great experience. The bar tender was so friendly and he created an awesome mocktail for me. Thank you! My husband and I ordered the cornbread, salad and the brisket to share. Sooo delicious. The food came out quick too. The brisket comes with different sauces to put on it, but I ate it as is. Very tender meat. The cornbread came with maple butter. I ate slow because I didn’t want it to end. I highly recommend this restaurant. I hope they open one of these in Connecticut.

Mixed feelings. Food was very good! A small but tasty menu offered up with good choices of beers and drinks. The hot sauce is excellent! Heres the strange. We sat for at least 40 minutes before we as the customers realized you had to order at the bar. Meanwhile the place was empty yet 5 people working behind the bar couldn't let us know? Then we have to return to idea of why are we being asked for a tip snd on the menu it asked to send the kitchen staff $5? We just paid 65 for two people but ill get my own water.....nope

Service and atmosphere were great. Food was not. The chopped pork sandwich ($16) lacked flavor and tasted like a reheated batch from 2 days prior. I’ve never had Arby’s pulled pork but I imagine it’s similar. I tried all 3 sauces offered and none were good. The duck fat fries ($9) were standard shoestring fries that didn’t stand out in any way. The best tasting item of my meal was the dressing on my side of mixed greens ($6). Not a great sign for a bbq joint. $31 total and I was disappointed as I heard a lot of good things and we traveled an extra 30 minutes after an 8 hour drive to VT to specifically eat here. My friend ordered the brisket sandwich ($16) and said it wasn’t as good as he remembered on a previous trip. I’ll reiterate that the service was great, but we were also the only table there around 5pm. For the prices they’re charging, they’ve gotta do better than good salad dressing.

We decided to try eating here for the first time for our birthday today. Absolutely AMAZING doesn’t even hit it. The smell draws you in, food was out of this world and the piece of maple lime pie…O M G!!!!!! That finished our meal off perfectly! The service was incredible, food came out quick, was hot, and they even accommodated a service animal!!! We highly recommend anyone to try Prohibition Pig!! You will not be disappointed. On a drive in from Montréal we were looking for a place to eat and stumbled on this resto. the amazing aroma from their smoker drew us in, and it definitely did not dissapoint. Impecable service, and the food was delicious. The hot sauce was so good, I threatened to steal the bottle if they didn't sell it to me! If you like BBQ you need to eat here.

We did not have to wait for a table which was nice. The staff is very friendly and efficient. I was mostly annoyed at the prices. We frequent BBQ joints and I’m always willing to pay a decent amount of change because it’s hard work to smoke meats and usually the portions are massive. I had the smoked turkey breast. It was $20. For one slice of turkey. This comes with 4 pickles and Cole slaw. I also ordered Mac and cheese and the baked beans. Baked beans were not good, turkey was dry but the Mac and cheese was great.

This place rocks! Hubby and I were visiting from NY and came here our last night for dinner. We had the brisket, a side of pork, a side of Cole slaw, smoked mushrooms and the duck fat fries. Everything was superb. The mushrooms...amazing. The brisket was cooked to perfection. Our waitress, Amy, provided phenomenal service (thank you!). Jesus Lord this place is incredible. Currently on a roadtrip and I’ve died and gone to heaven! Beer, delicious. But the thing I really have to mention is the “sweet and spicy Mexican bbq ribs”. MY GOD! Hands down the best flavor, cook, and presentation of any rib I’ve ever had. Beyond delicious… I’m tempted to say it’s life changing. Just talked to the chef that created the sauces and she literally just created this perfection from scratch on a whim. Ribs will never be the same again! Amazing job! 😭❤️

Just ate there for the first time. Can’t wait to go back! Food was a 10 out of 10 for me. I believe their current rating is too low. I got a brisket that had the perfect crust, texture and flavor…mmmm. Loved the cornbread, Cole slaw, beans and pickles! My hubby got the Pastrami sandwich and loved it. (He added mayo to his) . The servers were so nice. Loved the look of the restaurant too. We were there at opening (4PM) so it was quiet, but we tried to eat there last night and the line was out the door, so ai know it gets busy.

Really great bbq, you can see the smokers working in the back before you come in. Extremely knowledgeable staff, knew all the ingredients of menu items without asking kitchen. Delicious food and food portions. I highly recommend buying the farm if you are 2+ people. It lets you try a bit of everything. The bbq sauces are also delicious and very decently priced considering the size of the jar.

It’s VT. Make sure you wear your mudders especially in “mud season”. There’s a lot of mud up here and pigs like “mud”! Seriously. If you’re coming up this way, a stop @ Pro-Big would be a good suggestion to stop in for some beer(s), libations and incredibly complimentary grub to the drink menu. Me and the wife are in town visiting for work and decided to try this restaurant out me being from the Charleston South Carolina area I’m very much into Carolina style bbq and I’ve tried just about every place I can find with a vinegar style sauce and so far this place tops them all we where very pleased with everything including the drinks our waitress I believe her name was Hailey k at least that’s what is on our receipt was truly amazing and very helpful her recommendations were perfect just wanted to let yall know how much we enjoyed everything including the service

Cannot say enough good things about this place. Read the reviews and tried it. The best smoked wings I’ve ever had! Mac and cheese was well made, smoked meats was perfectly smoked and seasoned. Even the salad with the maple vinegrette was a great surprise. And duck fat fries are to die for! Only thing I didn’t like as much was the pickled carrot. Was expecting fresh carrot to dip in my ranch and was weird to bite in to a pickled one. Service as fantastic! Recommend you do wait list vs. just showing up! It’s easy to do and saves you from waiting in the restaurant.

A bit nervous coming here and not sure if there were gluten free options. Don't think twice. This restaurant is a must!! The staff is very kind and knowledgeable about the items on the menu. We added our name to the wait list which can be done online. It's totally worth it because as you drive to the restaurant you are still considered waiting. All the meats were gluten free(sauces, rubs, etc), gluten free bun available too. Deserts were not gluten free, but that wasn't the focus of our visit. Super happy that it was a menu friendly to all palates. We had rib, which fell off the bone, chicken wings, and brisket. Our waitress was Emma. This restaurant is very, very lucky to have Emma on their team. She puts her customers' needs as a priority and genuinely cares if we are enjoying our time. We mentioned waiter races, which are done over in Europe and even here in the U.S.A. She may be starting a fun tradition in the near future for business venues and visitors to enjoy! We're rooting for you Emma!

We came in as a family of 5; 2 parents and 3 kids. 40 min wait. Usually we get fine polite, what you expect. Staff at PP could not have been more awesome and charming. Made us feel despite our 3 rugrats that we were actually important and they cared. Sat us at the bar to wait got an appetizer, thoughtful bartender got the kids 3 plastics cups, then super sweet kind waitress. Wait was about 10 min btw. Amazing service sweet kind people.

Atmosphere was good, service was friendly, food tasted great, but the portion size was really disappointing. I got the sliced brisket (pictured) for $23 which the menu says “comes with lots of pickles, slaw, and a roll”. I was served two tiny pieces of brisket (they did taste great), a roll, a few pickles and a ridiculously small portion of coleslaw.

The food and drinks were amazing! However upon arrival we were not greeted at the door until about 8-10minutes of waiting. I’ve sat at Pro-Pigs Bar a few times over the last 2 years since moving to Waterbury. All the food offerings come out fresh/hot, delicious and timely. The bar tending staff rocks! The cocktails are expertly crafted and the in house brewed beer is delicious. They brew beers of many varieties to please any beer drinkers. Shout out to the Nacho engineers constructing the well layered, cheese to meat “ratioed” pile that we all deserve from a BBQ joint.

My friends and I came here on the first night of my bachelorette trip and really had a great time. Quaint and atmospheric bar with amazing barbecue and sauces. We got the “Buy The Farm” and tried a little bit of everything. The standouts 100% were the ribs, brisket and pulled pork. The cornbread and Mac and cheese were also amazing sides (and honestly could just eat that all night). Only thing we weren’t a fan of was the jerk chicken which came out undercooked twice, but the staff was very nice about it. Didn’t think that I’d find good barbecue this far north but I was pleasantly surprised. Would recommend for group dinners or date night, but the bar atmosphere might be too much for little ones.

All of the servers here make sure you have the best experience ever, even on a busy Saturday night. Drinks were great, food was great, price was great. Very chill fun atmosphere and the amount of people waiting for a table shows you it’s one of the best places in town. Just don’t order the hot sausage-not much flavor and was only good if you drenched it in the sauce. But the brisket nachos, broccoli salad, Cole slaw, and bread were all amazing. Great burger, fast service. One of the places to eat around town. After a long day of hiking in the woods, that burger was exactly what I needed to hit the spot, cause you know what they say: a burger is good after a hike! Bout to go home now and play some disc.

Got there right at noon on a Sunday and there was a line outside, no big deal, we grabbed seats at the bar instead of waiting for a table. Tried to order a ginger ale or sprite and were told they didn’t have any fountain sodas, which was fine, I get that it doesn’t fully fit the concept. However the bartender also told us the only soda available were those on the menu and then we saw other tables served cans of Coke and Diet Coke which were not offered to us. We ordered nachos and wings to start. The nachos came out quickly and were good, but the wings took a while. When we pointed it out to the bartender she went to check on it, came back and said they’d be out in a few minutes. Either she forgot to ring them in or the kitchen lost the ticket, I get it, it happens. Either way she didn’t apologize after the wings were brought out to us 35 minutes after we sat down. The two bartenders seemed way more concerned with stocking the bar with straws and glassware than actually paying attention to their guests experiences. I get that it’s tough to be flat sat when you open, but maybe open a bit earlier if you have a line forming consistently and you’re putting your staff in the weeds to start the day. Next, a couple sits next to us and were given specials menus that we weren’t offered. It seems we were given a level of service quite a few steps down from those around us. We ordered entrees and after putting in our order the other bartender came over, took the sauce caddy from in front of us and gave it to a guest at the other end of the bar. When our entrees came out, our bartender didn’t bother to bring any back to us. The couple next to us got their entrees sometime after and she was quick to bring the sauces over for them without being asked. I used to come here at least once a month back when I lived in VT and this place has been one of my favorite restaurants in the past decade. I used to rave to my friends who visited the Stowe area that they need to take the trip to eat here. After today I think I’m all set and probably will not recommend this place, it seems it’s a far cry from its former glory. Food was okay overall, nothing special anymore. Im hoping the lapses in service can be chalked up to ineptitude instead of blatant avoidance but who knows, either way it was abysmal.

I seem to be in the minority but I wasn’t super impressed. The wait staff was friendly but they forgot two of our sides. The consensus among our party was that the meats (smoked Turkey, ribs, and brisket) were a bit dry. I think it’s pricey for what you get. The rolls and Mac n cheese were tasty though.

Wow. I’m sincerely hoping that our recent visit to Prohibition Pig was more indicative of its post flood recovery than its future. This used to be our favorite place in the Stowe/Waterbury area (even maybe in all of Vermont) but wow has it changed since the floods. The glaring problem is the fries. For whatever reason, they have gone away from the awesome duck fat fries you see in the photos on TripAdvisor, to these thin white things you would see come out of McDonald’s. Even if they tasted decent, they just look cheap. Another menu casualty was the perpetually incredible poutine. Which has been a menu favorite forever. This was literally what got us into poutine, and until last year, the standard by which all other poutine is measured (yes including Montreal here). How can holding some cheese curds and gravy in the fridge be considered too much overhead to warrant cutting perhaps the best thing on the entire menu, and the best poutine I’ve had (including Quebec)? The menu has also shrunken considerably. The number of entrees has been slashed dramatically it seems. Appetizers have decreased to only a handful. Or maybe it just seems that way because the entire menu (including beer) fits on one sheet now. Where previously it looked like a real restaurant menu, with many choices, explanations of items and a separate menu for the beer. Whatever the reasons, I sincerely hope that this is all just a recovery effort. Because otherwise it’s a huge loss for the Stowe dining scene. Like how much effort would it really be to just go back to “good looking” fries and stocking some poutine?

Stopped here on Friday this past weekend. We had a wait to get in the restaurant but there was a wait every where else as well. I could smell the food from outside. The drinks were cold and delicious. The food was hot and very tasty. We had the pork ribs and hot sausage as entrees, the ribs were very delicious and didn’t need any sauce on them. The nachos which were served with brisket were very flavorful as well, we had that as an appetizer. I would recommend to anyone in the area.

I’m a huge fan of the Pig and have been comming for years with my family. I realize the establishment has been through some rough times as of late (the pandemic, recent floods etc) but the menu keeps getting smaller and smaller. They used to have a great selection of salads and different burgers. Most recently we discovered they took the POUTINE off the menu??? I understand the need to simplify some things, but the poutine??? Very dissapponting. I’m really hoping this is just a temporary adjustment and that they will start adding things back to the menu, especially the poutine.

Great place and location!! Every server/manager who passed our table checked in on us. Service was outstanding. The brisket nachos were amazing. Pork entree, brisket sandwich, and Mac n cheese , slaw, and potato salad were delicious. Unfortunately they were out of the brisket entree, which I am told is awesome. We were interested in some non alcoholic options and really enjoyed the Bitters Bubble (hibiscus bitters soda no sugar) and the Lemon Mapleade. Next time I would like to check out the brewery.

What happened to the poutine and original duck fat fries? Have been coming here as along as I can remember. I’m a big fan. 5/5 stars before this last time. But this past year they swapped away from the original fries to ones that look like what you get at fast food restaurants. And the poutine is gone. How can you remove such a signature dish that’s so easy to make and keep prepped in the kitchen? It’s just gravy and cheese curds, which can be kept in the fridge until ready to go. Not sure why they would eliminate a staple.

We went for lunch and got the pulled pork sandwich and it was huge , I ate the other half the next day . Great beer selection as well . Very accommodating if you bring your dog . They were busy but you'd never notice, every thing cane in very timely matter . If I lived closer , I'd definitely go back .

This place made several lists for "The Best Burger in Vermont" and they did not disappoint! It was absolutely amazing and instantly made my top 10. We came all the way from Texas with the intent of eating this burger! My wife, however, opted for the brisket nachos and they were phenomenal as well. The Duck Fat Fries were spectacular. They were hot, crispy, and fresh. I will definitely be returning!

Stayed in Stowe but drove down to try this place. The reviews don’t lie - it is amazing bbq. We all shared multiple dishes and everything was delicious, not one thing I would change. Note there could be a long (not surprised given the good and ambiance). Would have someone come by when they open and put your name on the list (no reservations). We will return again!

Great food, and some of the best servers around. Bartenders tho (one in particular with RBF) can be moody or indifferent. Prices are reasonable if you do it right. Maybe the people that are saying it’s expensive are dining solo and I can see their point. Sandwiches come without sides and to add fries it’s $9 because they only have the big portion. Pro Pig would be smart to offer a smaller (cheaper) add-on to sandwiches.

The person who opened the door at 4pm when they opened was extremely nice, as was our server. Everyone else we had contact with was also extremely nice The food on the other hand was not that good. My husband and I both got the potato salad and it was a stretch to calling it potato salad, there was no mayonnaise, there was very little flavor and the potatoes were much to big. My husband had the brisket and he said it was average at best, he said we have had better. I had the smoked turkey breast and it was OK, no real taste. We wouldn’t go back back
