This is destination Barbecue, and worth any distance traveled to get here. Located in the remote town of Marble Colorado, Slow Groovin BBQ has been quietly serving the centennial state's best smoked meat for over a decade. The town it is in is a serious tourist attraction all on its own, and from spring to fall this tiny historical landmark is jammed packed with leaf peepers, off-roaders and outdoor enthusiasts. They all used to eventually end up at Slow Groovin simply because it was literally the only restaurant in town. A true testament to how far they've come however, is the fact that now quite often the reverse is true for its patrons. Eating here is now a pilgrimage that many Coloradans must make AT LEAST once a year, regardless of which far off corner of the state they live in. Getting to check out the historic marble mill or taking a scenic drive up to crystal city is now usually only the consolation prize for driving so far just to enjoy a plate of some of the best barbecue in the west. BBQ obsessives can sometimes get lost in the weeds with region specific snobbery. I get it...to a point. Yes I've had better slices of brisket in Austin, and definitely enjoyed the cook better on a few ribs in St. Louis. I had a pulled pork sandwich in the Carolinas so good it made me believe in love again, and better chicken while judging a backyard competition in Western Colorado. The point is that all of these examples were only so marginally better that it barely deserves a mention. I don't live near any of these places, so why compare every bite to them? Brick-and-Mortar barbeque restaurants rarely get as good as this, and never operate at this level of consistency. Not just consistency either, but constant improvement. When I come back to meats I've gone a couple years without ordering in favor of other favorites, without fail I'm always blown away and kicking myself in the butt for going so long without eating them. The fact that I've been having this same problem at Slow Groovin for so many years is bewildering. The talented pit masters and kitchen staff are always refining their techniques and honing their craft to delicious effect. This attention to detail spills over into every perfect side dish and all of their insanely good appetizers, providing yet another hurdle when trying to decide how much stomach room you have before ordering. The line more often than not stretches to the road, but one of their simple but perfectly executed cocktails makes waiting painless while taking in the amazing views of Marble. Year after year their handpicked staff run this madhouse like a well-oiled machine, keeping the vibes chill and the food moving with ease. This is Colorado's best barbeque restaurant. In fact, there isn't even a close second place. Take the drive before the snow flies and thank me later.

All restaurant owners should take a lesson from this establishment. WOWZA excellent kind service. You have the option on the menu to purchase a brew for the crew and believe me, they deserve it. This is a well oiled machine that has great music, wonderful food including some vegetarian options, nice mixologist treats, casual, fun, in a wonderful atmosphere in downtown Marble. We visit a lot of mountain towns and usually service leaves a lot to be desired. Here you are in one of the most remote areas will no cell service and this place knocks it out of the park. Great job to everyone who makes this BBQ joint happen. It was fun and delicious.

The BBQ is very delicious here, very quality menu. The staff is friendly and attentive. Given this is the main restaurant in Marble, it can get crowded and the wait time might be a bit long, but it is worth it if you have the time!

Everything was absolutely delicious but the cornbread was the ⭐️ in my opinion, crunchy, a little sweet, buttery, everything you want and more! My friend got the fried chicken and the cut of meat was really small (I think usually it’s bigger) and the bun got rather soggy very quickly. Buttttt overall a stand out and great sauces - def try them all!

This eatery is really unique because of the tasty ribs, succulent brisket, and cozy setting. Your family pet is very welcome to visit here as well; in fact, there is a menu with dishes just for them. Slow Groovin was one of the best dining experiences I have had in some time :) the staff is knowledgeable, friendly, engaged, and passionate about their food and environment. The food was outstanding. This had a family get together feel with the freshness of the ingredients and the quality of the plates. My friend and I split a two meat plate featuring beef brisket, pork ribs, the default sides of beans, coleslaw, toast, and pickled onion, and an additional side of fried okra. The beef had a gentle hickory note, wonderful coloration, and a thin tasteful amount of charring. It was melt in your mouth, grill master Uncle Joe peel brisket. Rest in peace. The beams seemed to be prepared in a semi sweet tomato based sauce and were paired well with fresh bell pepper and chopped onion which created a nice sharpness in the flavor. The coleslaw deserves high praises. It tasted made that morning and was not dependent on heaping amounts of sauce, rather a tasteful vinegar infused palate cleansing experience of fresh cabbage. Really very pleasant. The pork sausage was good and I was not able to pick out too many intense flavor profiles. The sauces! On the table were a sweet Carolina style bbq, a more vinegar based “medium”, and a wonderful hot sauce that was not overpowering and present a true to its name gradually flavorful buzz. My personal favorite was the hot and really made the meats sing (not that they needed much help) The “Texas” toast was a little thin for this Texan’s standards ;) though it was toasted beautifully and had a well balanced spread. The fried okra was beautifully battered, fairly thinly, with tasteful amounts of seasoning in the fry batter. The okra was just shy of perfect in my personal bias of enjoying a little bit crunchier of a bite - don’t let me take away from the quality of this side. They were damn good. Beers were served cold and the draft was poured in mason jars, which felt fitting to the town of Marble. Speaking of the town of Marble, sitting outside enjoying this wonderful handcrafted spread, we were also able to enjoy being surrounded by a quaint historic town, soft earthy smells mixed with the occasional whiff of smoker in the close distance, to top off the surrounding mountains we were blessed with fresh cottonwood seeds drifting through town adding a “snowing in summer” like effect. All in all, a wonderful experience and a reason all in itself to make a trip to Marble, CO. Hope to enjoy the service of this family owned gem soon.

Is it worth the drive from Glenwood? No. Is it decent food? Yes. Would I recommend it if you're already in the Marble/Redstone area? Absolutely. The wait staff seemed a bit unorganized still wasn't sure who our waiter was just three kids running around with iPads. The food somehow came out cold, I'd blame the wait staff not the cook, (nachos not recommened) and pulled pork sandwich which wasn't even pulled just a fat slab of pork really. Tastey with big portions their rendition of jalapeño poppers looked tastey will get those next time we go back.

Testimony to "build it and they will come." Marble isnt exactly a metropolis and getting there at night requires caution and bright headlights. But, worth it if only for the experience of arriving at the one brightly lit and busy building anywhere in sight. While the BBQ was great i can't say it was the best ever but again, this place is swt back in the mountains so, they deserve credit for all they do. The staff was terrific and prices were very reasonable.

Stopped in between trail driving& they were packed, so we ordered to go. Food was a bit pricey, but it was totally worth it! We got fried chicken sandwiches with fries& okra. It was delicious! Fresh cut fries, hand battered okra, coating on chicken was so light& crispy (& slaw on it was a nice touch of sweetness)! Hidden gem in the town of Marble. We stopped after we got a recommendation for this place by some gentleman at our hotel. My fiance and I both got the pulled pork sandwich with corn bread. It was some of the best pulled pork I've had. The employees are super friendly and open the door for you when you arrive, good is served in a timely matter, and prices are very reasonable. You need to check this place out.

Way off the beaten path, in the very small town of Marble Co (pop 164 I think). A-MA-ZING BBQ in a funky little restaurant. They were super busy so service was a little spotty - but not unreasonably so. They do this thing where people add $10 to their bill to “buy a round for the staff” then they all hoot, holler and pound on stuff in the kitchen. It’s cute the first couple of times but after the 4th or 5th time while we were there you realize it’s really impacting service. Definitely worth the trip though.

We will literally take a 5 hour drive to Marble just to have lunch here. BBQ is spectacular, prices are good, portions are enormous (that Man-Eater is no joke!), and the only place I've found in the state with a truly decent Carolina-style sauce. Staff is super locals in a ridiculously tiny town, and they take care of their customers accordingly. I'd give 6 stars if I could, *Always* worth the trip!

A mandatory stop for anyone visiting the region. This restaurant has the best barbecue I've ever tasted! The place is very interesting, in the middle of the forest, with a rustic and welcoming atmosphere. Beware of the hostess and/or waitress Linda. When we paid, we paid with a $100 bill for $50 worth of food. We continued to wait for our change and she never returned. I confronted her inside as we were eating outside. She said she would return with our change, but later returned with a single dollar bill. I showed her the bill and she stated that she already gave us change, I countered with then why are you offering a single dollar bill now. After getting very vocal with her, she returned with the correct change. I even after all of this, tipped her $10, initially we were going to give her more as the food and atmosphere were great. So buyer beware, use credit cards at this establishment!

Insanely good BBQ. If this place was in a city instead of the end of the road in a mountain valley you'd read about them in food and wine or the new york times. The sides are made with care (corn and slaw especially), all their meats are cooked to perfection, and both their house sauces are to die for. The staff is very welcoming. Extremely disappointed with how the staff treated my family and I. This place has been recommended many times to us so we made a 2 hour drive to give it a shot, just to be greeted by a very unfriendly welcome. In fact the hostess yelled at me before I could make it up the steps as to where I had parked. Slow Groovn BBQ offers a stunning view with mountains and greenery, making it a perfect spot for both outdoor and indoor seating. We particularly enjoyed the scenic mountains while savoring our drinks, with the spicy margarita being a personal favorite. The okra fry left us amazed, and the fried corn and wings were also delectable. However, the twisted potato fries and chicken nachos were somewhat disappointing and didn't quite meet expectations. The ambiance of the place is enhanced by colorful flowers, adding to the overall pleasant experience. The barbecue-style meat was well-cooked and delicious. I really enjoyed my lunch here. The salad with homemade Bleu cheese dressing was incredible, and the brisket platter had great portions of meat and coleslaw. The beans were nice with a kick. Zach was my server and he was very friendly and efficient, even with one arm in a sling! This place is worth stopping into.
