I have dined at several restaurants serving omakase. I was not expecting to be blown away by a sushi restaurant in old town Scottsdale, but WOW, this is a fabulous meal. It was a perfect spot for a birthday celebration splurge. Every dish was exploding with flavor. I can't recommend enough....fantastic service and delicious food. The intimate setting may be slightly uncomfortable for some, but we thoroughly enjoyed it. I would definitely dine at ShinBay again while visiting Scottsdale.

Delicious Omakase only dinner. Have been there three times so far and impressed each time. It's expensive but you get what you pay for. A lot of food is imported from Japan. A5 Wagyu beef, unique types of fish, all prepared right in front of you in an intimate composed setting. Must love raw fish to appreciate this place. If your idea of sushi is deep-fried rolls, you probably won't appreciate this restaurant. If I had the time and money, I would want to eat here every day. The only thing that could make it better is for them to have wine pairings with the dinner.

Ho-ly WOW! I regularly go to Across The Pond for great sushi. Shinbay is THE BEST place to go for sushi. You get the freshest fish imaginable for AZ, the most attentive service, and Chef Ken's flavor balance deserves praise and respect. We left satisfied. Each course was perfectly balanced and made the room quiet. We can't wait to go back!

An evening to forget. We should have known when we received the reservation confirmation and they restaurant clearly stated that if you're late, your reservation will be cancelled and you must still pay. We showed up at the door four minutes early to be told that they "are running behind and have no place for us to wait". No bar or waiting room so we were chased away. No ownership that we're paying customers. We came back at 20 minutes past the reservation time and the restaurant was still not ready. Food was good. During dinner the restaurant ventilation was not good enough so the front door was opened which made the place uncomfortably cold. Also, they did not have enough ipads (being used for menus) so we were asked to share, then the wine we ordered came out with a different vintage. So many cases of "bait and switch". We will not go back.

Absolutely fantastic food and service. A great culinary experience. That said I've paid less for the same level of experience and penultimate service. Looks up what a bottle of Loveblock wine pinot gris 2020 will run you. I paid $120. Even the highest end of culinary experiences has a value limit and this isn't it. If you have the money to do this on the regular I would recommend it but for a once in a very great while place I could recommend many other places in the valley where 5-600 is better spent for those rare moments.

If you love sushi (and have an adventurous spirit), hot damn this place rocks! This spot is for sushi lovers. Warning: if you don’t love lots of raw fish, this spot is not for you! Some crazy textures (cured jellyfish). Some wild fish (deep sea line caught only! FRESH. Shockingly fresh. So flavorful. Clearly a master. Best sushi experience I’ve had outside of Japan.

Food: Outstanding. Creative, unique, extremely flavorful, complex and also complimentary. An absolutely excellent tasting menu and I would honestly say there wasn’t one bad bite. Also had an excellent, and quite large sake selection with very thorough and helpful information on each selection. Service: Impeccable. The host was also the only server, the seating is usually limited to 6 or 8 guests I think, so you get their full attention. The host did an excellent job introducing each course, was very attentive and happy to talk to each guest and answer questions/offer detail. I don’t recall the chef ever speaking once during our entire meal of at least two hours. Atmosphere: Modern, very well done, simple and well maintained etc. I only docked it one start because it almost felt a little sterile, sort of lacking in personality in a way. Maybe that was in order to let the food shine and not detract from the culinary experience (which the food certainly did, thank you Chef) but if you’re looking for an atmosphere that’s as visually stimulating as the food is for your sense of taste and smell, this may be your only disappointment.

I’ve read the reviews on here and I can understand when people complain about hidden costs. It is a very expensive night. It’s $250 a person so my hubby and I spent $500 for sushi, then add the drinks and the other costs that these fancy places add on and gratuity; you have a $700 bill. So this is a special occasion type of place. As far as leaving here hungry, don’t be a piggy American who complains when their dinner isn’t super sized. Nowhere else in the world do they feed patrons a meal for two, meant for one. Lastly, you aren’t just paying for primo sushi which I must say this was some of the best sushi we’ve had and we’ve traveled the world. You are also paying for an Omakase experience inside a 10 seat restaurant with a twice-nominated James Beard semifinalist sushi chef. So consider that. Great service, fantastic food as close to authenticity as you can get in the middle of the American desert, and some really interesting sake. Enjoy.

Absolutely amazing. The fish was so fresh. Everything tasted so good, but you have to adjust your expectations. This is meant to be an experience, it's not a place to over eat and get stuffed. Chef Shinji and his right hand man Suzuki were right in front of us. It was awesome being that close and seeing everything get prepped for you. Michael provided such great service with everything else, and was very attentive. They only serve a maximum of six people per sitting, so it was very intimate. We will definitely return.

This place was really great. Honestly - some of the best fish I’ve ever eaten, with chefs that clearly care about and take pride in their work (rightly so). Half way through we were convinced we would make this a regular occurrence, but that all changed upon arrival of the check. We knew the price of the food in advance, and we were prepared for the (high, in my opinion) price of the sake. What we were not prepared for was the $100 service charge and then … being told that the service charge does not include tips for the chefs. That ended up being close to $150 extra than what we would typically pay in any other restaurant. The food and the service is great, and we were both prepared to pay premium $. However, being stung for extra charges on top of an already expensive meal really put a downer on our night. Had a great time, but for the surprises and costs at the end I don’t think we’ll head back any time soon.

This is my honest and fair review. Good presentation. Fair quality of fish. But I was disappointed by shari. Temp is slighly colder side, and amount of shari is good. But vinegar mix came out like wrong combinations. Shari is the most important part of sushi. Also Kohada was not well made. I do not mean to be critical, but the soul of edomae sushi was missing in this omakase. Just my personal opinion from someone raised up with edomae sushi in Tokyo. Harmony of fish and shari is very important here.

Despite every dish being absolutely high quality, for the price I can’t give it five stars when half the items only tasted “pretty good” and the the highlights were all “almost as good as the best I’ve had”. If you don’t have experience authentic Japanese food, this is a fantastic tasting course. But for the more experienced looking for something to blow their socks off I’d recommend Binkleys. For the same price and booking ahead requirements every single one of their 20 dishes was a food wars moment.

This place is great but candidly I'm a little disappointed. I'm not sure if I built it up but it didn't deliver on the hype or expectations. Having said that the experience, service, and food is superb! The service was very attentive and the environment is intimate - so much so, you become self-concious of your conversation because everyone can hear you. The ingredients are extremely fresh and out together nicely for unique tastes. However, for a tasting menu, it leaves you wanting to go get a burger afterwards because the fare is so light (which could be a good thing depending on who you are). Personally if I'm throwing down that much for dinner, I don't want to feel like I need to go buy more dinner lol. I'd still recommend giving it a shot if you like omakase but I've had much better in other states so adjust your expectations accordingly.

A very split experience for us. We liked the ambiance and the surprising location. We thought the food was good, and some of it was great! ShinBay takes a very original approach to Omakase, with novel (for us) fish and seafood selections. A lot of yuzu and other citrus flavors, too. We really appreciated the creativity of the chef, and the execution was superb! But. The dinner was very rushed. In an effort to keep the pace, our plates were removed sometimes before we were done, new dishes were consistently brought in while we were enjoying the last one. The spirit of the service was clearly "please hurry up". The restaurant predicts that the experience takes about 2 hours and that would be the minimum time needed to do it justice. Yet, all the other diners for the 8pm seating were successfully "managed out" by 9:30, and even we were pursuaded to leave by 9:50 (we were 10 minutes late). We understand the staff has other things to do, but this left a bad taste in our mouths.

Really good sushi but felt like not enough staple nigiri pieces. There was no salmon, unagi/anago, snapper, or ikura nigiri pieces. There was also no maki/tamaki... However, there were many deep sea fish that were definitely unique and tasty. I think some of the energy going into the early appetizers should be directed to just more nigiri. Great dinner, nonetheless.

Quite an experience! I was pleasantly surprised tonight by the chef's course which was 5 courses + dessert for $100. First, the sake menu was extensive and the blood orange sake was delicious. Next, we were presented five courses of perfectly presented (and well explained) food that in my opinion gave a very well representative sample of many Japanese staples. From the seafood bites to the cook your own Wygu beef to the nigiri I couldn't have asked for a more diverse selection. The staff couldn't have been more kind, helpful, and inviting. A true gem in Arizona. Definitely meant for special occasions.

Shin Bay was phenomenal in every way. The ambiance is almost "spa-like" - warm, quiet, relaxing, inviting, etc. The service was excellent. Most importantly, the food was exceptional. We opted for the $125 tasting course and requested that the chef recommend wine pairings. Even with high expectations, we were blown away by every course. Compared to similarly priced meals in Scottsdale, this was a great value. Very highly recommend.

Have been a sushi chef in various restaurants around the valley and after reading the reviews on Yelp, I was prepared to be disappointed. However, I was pleasantly surprised as each bite of each course was very very very good. Date and I could not stop talking about how good everything was. The only cons I have are: Out of the seven courses, shrimp/prawn was present in 4 out of the 7 courses. The last one being a dessert, that's 4 out of 6. They were all delicious, especially the nigiri, but it seemed like they were taking the easy way out? Hard to make really good shrimp/prawns taste bad in my humble opinion. Also, don't expect a "Jiro dreams of sushi" type omakase; only one out of all the courses was nigiri. Don't get me wrong, it was a nice variety of Japanese entreés. I personally would have liked it to be more sashimi and nigiri intensive. That being said, I was ready to go every week but from seeing pictures and reviews posted here, a lot of what is given as omakase seems to be the same. I am not entirely sure, but I did not want the exact same omakase the week after my visit. Am I being weird? Even after all these slight personal gripes of mine, I can still say it was the best meal I've had in Arizona and I've been here since 1997.
