If you remain patient you will eat one of the best meals you've ever eaten. I am a non-vegan and the vegan food made by chef Will is incredible and so so very worth it. Everyone involved with the palate is incredibly kind and generous and friendly. Chef Will gave my partner a free nacho platter after a minor incident with our food, and then two free watermelon drinks for our patience. I've never experienced such kindness and generosity from any eating establishment. Thank you all for the amazing experience and frankly mind blowing food. The portabello pepper steak wrap will change your life.

The food is great, but it is difficult to actually arrive when food is being served. My husband has tried twice in the past week, after calling to confirm hours of operation, yet there was either nobody around or he was completely ignored. We want to spend our money here…but Chef Will is making that difficult to do…

He’ll convert any meat eater to an all vegan diet. I really wish he’s sell bottles of his sauces. Theyre so good.

He is just 1 man and you have to understand that, but this is one of the top vegan/vegetarian food places you’re going to love. I live in Florida now and I am craving his great cooking so much. Did I mention that everything is home grown and no food is store bought. Amazing Quality.

I was looking for a ‘restaurant’ but THANKFULLY I found Chef Will’s food truck outside of the Lowe Mill. My goodness gracious‼️‼️ this food was AMAZING for someone who has been vegan for just one year-post heart surgery. I live two hours away and was just in town for an event at the VBCC, looked for best vegan places near me and the rest is history…give me two hours or a day with the wife and this is a no brainer to drive back up for Chef Will💯🔥🔥

The food is delish!!! Might be a wait but he works and focuses on each meal. Everything is freshly made so that explains the wait!

Food was great, a little slow, but overall great experience

Of course the best food in the world is cooked in a food truck around the back of a building in Alabama. Chef Will matter-of-factly introduced himself as a Culinary Artist, and true to form, created a masterpiece of fine art: chickpea tortillas topped with peppered mushrooms, arugula and other plants topped with a walnut sauce. I've traveled to the best vegan restaurants in many cities, even internationally, and I've found the best plant-based cuisine. In Huntsville. All I can think about is the recipe for this Walnut Sauce.

Had the portobello wrap, absolutely divine. My partner and I own a BBQ place so it's nice getting something veggie based as well. Would rate higher if I could. Thanks Forest!!

It's a food truck parked outside the arts center. Each meal is made fresh. Unfortunately, that means if there's people in front of you, you're going to have a long wait. Meals were $15 each regardless of what you ordered, cash. The portion was large, and with the fresh ingredients, worth every penny. The chef is eccentric, but as the name suggests, has an amazing palate.

Made the drive over here specifically to try this place. Everything I could find online said it should be open at noon on Saturday, but when we arrived we were told it wouldn't open until 2pm. Really wanted to try this place, very disappointed we didn't get to try

I tried this food truck yesterday. The food was excellent.

I am rating this with a caveat...exceptional food but slow service. I really wanted to give Chef Will the Palate 5 stars for service. I cannot based on how slow the service is. My friend placed our orders and unfortunately it was over an hour before our food was ready. Moving on, the food was delicious and the ingredients were fresh (perhaps the reason it took so long). I got a quinoa bowl and there was enough to eat for lunch the following day. The prices are reasonable and the food is good for you. If you don't mind the wait, check them out.

His food is very good. The service is extremely slow so be prepared to wait. Everything appears to be made to order. The menu changes so don't go expecting your favorite it may not be served that day.

Update (2022): The wait is still long but the customer service has greatly improved and the food has even gotten much better. So before finally having a taste of the food I had made 3 attempts previously 2 of which he was too busy to address me standing there because as the sign said "busy catering" which wasn't a problem if it weren't during hours that they previously claimed to be open. Long story short his customer service leaves an awful taste and the food wasn't worth the shabby customer service experience it came with which definitely was overshadowing.

Chef Will is the chef. The man's food is amazing, life-changing even. Every culinary encounter is worth talking about, worth repeating, and worth the wait. I highly recommend him to anyone who'll listen.

Chef Will the Palate is a hidden gem of savory masterpiece. Every time I get to the food here has been a total delight. This time I got the gumbo plate (yum!), mango tea with the sea moss (so refreshing), and banana bread!

I am from Huntsville but moved out of state. I enjoy coming to chef will when i am in town. I came today 11/09/22 at 2 on the dot because thats what time it says he opens on here. Well i expected him not to be open yet. I know he doesn’t always open right at two. I waited an hour for him to open. Nobody once spoke to me or said anything to me. No sign was up saying when they would open. Very unprofessional. I sat there for an hour 6 months pregnant with my 4 year old waiting patiently because that’s really really what i wanted. I was getting 3 meals and a drink. Well he missed out on that order because next thing i know a family comes and his helper or son i believe? Tell them they will open at 3:30 i was shocked one because why wouldnt you tell me that? You saw me sitting here waiting with my child and you have seen me here SEVERAL times in the past week. I come often and always order atleast 2-3 meals and drink. Or atleast put up a sign or something! I left at that point as hungry and drained as i was again 6 months pregnant. And had planned my whole day around going to chef will to support his business. The food is obviously very good thats why i waited patiently but i had to draw a line somewhere and i left. I would if come back but its the PRINCIPAL of the matter. Do better business. Put a sign up. Speak to your customers who are supporting your business consistently especially! Open on time maybe? Or atleast change the times on google if 2 is not accurate. Post on Instagram when youll be opening if its later than usual. Oh not to mention the way he takes the orders makes everything take longer. He takes your order and makes it and will not take anymore until he is done with that order. I cant complain about that its his business let him run it how he wants it works and the food is fresh just gotta be patient but if theres more than 2-3 people in front of you it will be a hell of a long wait. Keep in mind one person may be ordering 2 or more meals and may have someone with them. Thats also the reason i waited i wanted to stay the first in line didnt want to risk losing my spot. Im extremly disappointed and i dont know if i will return before i left Alabama. Or at all. Im opening a food truck in texas and i am thankful to know what NOT to do for my business. Wishing you well and i hope you can do better for your customers because without them there is no food truck.

This was a food truck and I must've waited an hour to place the order and recieve my food. It was worth every last minute! We ordered the Portobello Pepper Steak wrap and the black bean tacos. It was waaay too much for 2 people to eat. 1 meal can feed 2 people. Added walnut cheese. This was 10 stars! Be prepared to wait, he cooks everything fresh!

The food went to fast to make pictures. I will post pictures another time. This is a vegan/vegetarian food truck located at Lowe Mills. The things he can do with Portobello Mushrooms is heavenly! He makes this Ahhhmazing Spinach and Portobello Mushrooms wrap and it is to die for. Then there are his Super Tea's there is something for each of your ailments. His hours vary and he is not open on Sun and Mon. Swing by when you can, the wait can be long because your food is made right at the time of ordering. Peace and Blessings!

Okay when I go to a new place I like to tell the guy in charge of cooking just make me whatever you want don't care what I want to try what they think is the best was not disappointed I had what I believe is a mushroom rap not really sure it was excellent it also weighed a ton this is probably the best rap I've ever had it was excellent my wife on the other hand just got a pizza boring anyway go visit the place it's worth it

Chef will i feel definetly puts love into his food. His seamoss drinks are super delicious and very healthy. I have been suffering with seasonal allergies since coming to Alabama and as I was speaking to a young lady standing behind me about it, Chef hands us both a shot of from what I believe to be ginger seamoss that was quite delicious. His sons cookies and bluberry lemon drop cupcake is also amazing. I'll be back Chef!! Continue what you are doing sir. Peace and Love

That trailer has seen better days. It's almost scary looking when you find this food trailer close to the water tower. The question was: Would the cover be a sign of it's content? Nah! The food from Chef Will is outstanding vegetarian, vegan food that tickles your palate. Being a vegetarian for more than 30 years, I never had anything that could compare. I deeply enjoyed the broad range of flavors and textures of the quinoa bowl, although it made me wonder what kind of a mad man would pack so many different traditions on one plate. The quinoa bowl underscored that plant based food is not incomplete and that it does not need a highly processed meat substitute. The food is old school in the best imaginable way and impressively inventive. The dish comes lightly spiced and herbed to let the veggies shine but you get a sauce on the side that works very well with the quinoa and the plantains. Best of all it is surprisingly affordable. Tip well, he deserves it.

I have been waiting for over a year now to try Chef Will's food, and it far exceeded my expectations. I had the blackened portobello peppersteak sandwich, and it blew me away. The sandwich was substantial, grilled to perfection and topped with a freshly made walnut-cheese-sauce. Chef Will was so nice, and let me try his house-made sea-moss shot - it was gingery, peppery, and woke me right up! I can't wait for our next trip out to Huntsville- Chef Will the Palate's food truck is a must for lunch or dinner in Rocket City!

My husband and i had the mushroom wraps. They were OUTSTANDING. Some of the best food we have ever had. The gentleman that runs the food truck was extremely kind. A fabulous experience. I would recommend it to anyone. We are from Anniston but will make the drive to try the other items on the menu. 10/10!!!!

AMAZING FOOD!! We were here from Tampa, Florida and so excited to try Chef Will's food and it absolutely did NOT disappoint. Extremely generous portions, super delicious and affordable too. A true home run- wish I lived closer just for this!!

This is the best Vegan food we've had to date. The pizza was interesting, pretty and awesomely good. The bean burrito was amazing as well. This is a lot of food, so bring an appetite!

I searched huntsville for a REAL fruit smoothie for our daughter, not those chain concoctions…in my daughter’s exuberant words she described it as the best smoothie ever…the customer service was genuine and amazing and we devoured his creations! The blackened portobello mushroom steak is delicious!

This guy is one of Lowe Mill's resident artists. A skilled chef in the culinary arts even. Upon discovering that it is their first time, I always tell people that I meet in his line that the dude is awesome. If you can't decide what you want just tell him what you like and don't like and just give the man your money. He will do the rest. And you will NOT be disappointed.

Everything on the menu looked DELICIOUS! I was very impressed with the mushroom dish that was cooked like a steak (not meat of course) It had delicious favor! I will definitely be back to try other things! Great atmosphere and service!

Who says you can’t get full off veggies? Well I’m here to say that you can. I had a weekend visit with a friend in Huntsville. My friend recommended we check out a vegetarian/vegan food truck. Even though I’m normally a meat eater, I was open to the idea because I also love veggies. When we got there, a small line of people were in front of the food truck. To note we waited for a long time because Chef Will was going one at a time taking orders and then making the food to order. I felt for him having to do both tasks, so I didn’t mind the wait. When we got to our turn to order, my friend ordered the portobello steak wrap, and I got the portobello steak sandwich. I must say the food was very impressive. My sandwich was full of ripe avocado, mounds of spinach and sautéed portobello mushrooms. On the side was round tortilla chips with sour cream and some type of hot sauce. It was so good. The only thing missing was the meat lol jk. Seriously this place was delicious, and I didn’t miss the meat. Great job Chef Will!

Healthy and tasty! This was my first time ordering food from this food truck. I had the Southern plate. The cornbread and greens were soo good! Shoot, AND the rice, beans an avocados! The chef was nice and whipped up the plate very quickly! Definitely recommend!

Ridiculously delicious vegan food

THIS. PLACE. ROCKS! Food so good your grandmother would be jealous. We went for the first time and got a Southern Plate with greens, beans/rice, plantain and the best cornbread anywhere! Also a Blackened Portobello Steak Plate--holy moly just the best! Servings huge...taste even bigger! JUST DO IT! Yummy! :-)

The menu is fresh, ever changing and always delicious mostly vegan with some vegetarian options. The Chef is a wonderful and hard working guy but an optimist when it comes to time. He'll tell you 15 minutes but understand it might take longer and that's ok, it's well worth the wait.

I recently went here after a friend of mine suggested it. This spot is just outside of Lowe Mill ARTS & Entertainment in a small white food truck that has the restaurant moniker painted on the side with a quirky creative painted pic of the chef. It gives off a personal vibe. My initial impression of the restaurant was not the most pleasant. The chef was not friendly and was actually rude. I got up there and thought he couldn't see us waiting (we stood there for a while before I called out) I thought he couldn't hear me through my mask as I was speaking since that's a normal thing since the pandemic but after my third excuse me he spat out "I heard you" and continued to ignore me. That put me off. He could acknowledge us and told us he would be with us in a minute or something. I would normally leave before spending my money at a place like that. Despite the poor service the food was actually very good. I ordered a portobello steak skirt wrap. It was super flavorful and hearty. The portion size was pretty big and it came with some chips, sauce and sour cream. (He asked if I ate dairy before including it.) The chips were salted just right and I didn't even really need any extra sauces for anything. Its prices are comparable to any normal food truck but the portion size and flavor is worth it. It does take a while for the food to be prepared, he seemed to be the only person working in the truck, but there are seating areas with heat if it's cold out or you can wait in your car. I'm not a vegetarian or vegan but the food was great none the less. It's good quality food from a black owned business.

Sourced vegan options prior to our visit and we opted for Chef Will...excellent choice! Chef Will graciously accommodated our food allergies and whipped up a delicious sampler plate for us. Chef Will's trailer is located at the back of the arts building. Thanks Chef Will!
