BBQ so good that they could be the meanest and orneriest people around, and we would still go back! Thankfully, that’s not the case. Dan and his family are some of the kindest people we’ve had the pleasure of meeting! Dan gave us a tour, played the guitar and sang, taught us a history lesson, and introduced us to everyone who came by—he even gave us some watermelon for dessert. As nice as Dan is, the food is even better. My family and I couldn't decide which we loved the most, the brisket or the ribs. Both were outstanding. It was well worth the hour-long drive. We can't wait to go back. Hill Country is our family’s new favorite!!!

Went there for the first time. Brisket was hard, ribs were uncooked. Really bad experience. I’ve tried so many BBQ. Avoid this place is possible.

I ordered the brisket, rib and sausage plate with 2 sides. 2 slices of brisket 1 rib about a 1/4 of a sausage link with the sides for 25 DOLLARS wow that's not happening again!!

The barbeque ribs were cooked and seasoned damn good. I dined-in and ordered another rib plate to go. The only complaint I have is (respectfully)" STOP RUNNING OUT OF THE BARBEQUE CHICKEN"!!!

Food was great, but the hospitality was unmatched and worth coming back for if we’re passing through the area.

Great Chopped Beef BBQ sandwich. Very small blink and you will drive right by it. We showed up on Friday late midday.

Baked beans are really good, coleslaw was excellent, chicken, sliced beef, ribs and sausage were really good as well. No BBQ place would be great without a good BBQ sauce and yes....great as well. Affordable! And definitely NOT skimpy on portions. Will come back again!

Best BBQ sandwiches we have had in a long time, not to mention the fried okra alone is worth pulling over for…yummmy!! Do your Texas BBQ craving a favor by bypassing The Beaver and keep driving a little further. It will totally be worth the wait. And besides, the hungrier you are the better because the sandwiches are HUGE.

You HAVE TO stop in for some amazing BBQ. Ask about the burnt ends! You 100% will not be disappointed!

I ordered the Brisket Sandwich for lunch. Unfortunately, halfway through, I found mold on the bread on the bottom of the bread. This completely ruined my meal. Please ensure the bread is fresh before serving.

Stellar food; two meat plate with brisket and sausage, fried okra and Mac-n-cheese. Everything was perfect.

This is a historic restaurant adorned with photographs of George HW Bush visiting on multiple occasions. I get the impression that the owner must have known him.

the ribs were good, had the honey smoked ribs, tender meat delicious. aides could be improved a bit, brisket as good as well. However the best part was the Barbara Bush banana pudding, this was amazing!

I would say BBQ restaurants have evolved a lot, especially in the last 10 years. It is becoming harder and harder to find one that sticks to good ole' fashion pit BBQ where the beef is solely allowed to shine. Come to this place if you know what I'm talking about. I had a sampler of ribs, sausage, and brisket. Smoke rings were spot on, ribs had a nice pull and the wonderful irregular texture that true Texas ribs should have. Fat content on the brisket was just right. Enough to make it moist, but not too much where it takes away the fact that it is brisket. Sides were great as well. I would recommend the fried Okra and Potato Salad. Ambiance is truly authentic Texas, not manufactured corporate.

We arrived very excited to try their traditional BBQ food but the bad attitude stopped me when the girl told me how annoyingly that she only had brisket and that she no longer had chicken or turkey. And we left. I can't be where they treat me badly!!!!!

Title: Disappointing Experience with Terrible Service I recently had the displeasure of experiencing one of the worst services ever at Hill Country BBQ. From the moment I walked in, it was clear that customer satisfaction was not a priority. The lady who attended to us was downright rude and seemed completely disinterested in helping also mentioned that the only meat she had it was brisket but with a really bad attitude . Not only was her attitude appalling, but the service itself was subpar. We encountered numerous issues with the service , which were met with indifference and excuses rather than attempts to rectify the situation. It was frustrating and disappointing to say the least. Overall, I would strongly advise against patronizing Hill Country BBQ. The combination of poor service and unprofessional staff makes for an utterly unpleasant experience. Save yourself the trouble and seek out alternatives where your business is actually valued.

Best dang BBQ in the world. The flavor and hospitality at hill country is unmatched. Usually I sauce up my bbq but the brisket didn’t need anything. Dan is the man and was happy to show us around the pit

DELICIOUS! Great service, food was perfect! The girl that waited on us was super sweet! No photos because it was all gone before we thought about it. But it looked as good as it tasted.

20/10! If Hospitality and BBQ had a baby, it would be called Hill County BBQ. It was exactly the Texas experience that I needed and surpassed all expectations. Thank you Dan for the delicious meal, the sweet serenade and your kindness. I'm coming back for more!

The wife and I stopped in on our way home . Brisket was spot on. Ribs were a great dessert. Mac n Cheese and Fried Okra were great sides. The pecan praline we really enjoyed. Thank you for the hospitality.

Just keep driving down 6 into Hempstead and grab bbq there. Absolutely no flavor , owner made us extremely uncomfortable by dragging us into a small room and placing his hands on my husbands shoulder. Then asking if we’d play the guitar with him. First time stopping and last time

Food is wonderful! We had the ribs, brisket, potato salad and mac n cheese, everything was good! We were there on a day they had the banana pudding, which was also wonderful! Staff was very friendly!

I just stopped and got a chopped beef sandwich to eat on the road. A lot of places take all the scraps and put them into the chopped beef sandwich which I like plenty good cuz then you get some inside outside stuff this place sliced off some brisket chopped it all up and put sauce over it hot and it was juicy and probably one of the best I've ever had so I'll have to go back and have the whole dinner but if you can judge a place from their sandwich is totally awesome five star quality. It's easy to miss because it's down below the highway look for the tall electrical Tower and it's directly across the street from the electrical Tower

Best sliced beef sandwich I’ve had in a long time. I ordered a sliced beef with marbled brisket. It was perfect. Not too fatty and good portion of meat. I was really craving a sliced beef sandwich and was very happy to have happened to find them open on Sunday for lunch.

Drove an hour to eat here and was 100% worth it. Wife is pregnant and the baby was kicking for some more!! Haha

It's worth stopping for great BBQ.

I purchased the chopped brisket sandwich. It was really good, they beat my favorite BBQ place in flavor. The only thing I would have preferred would have been to have the BBQ sauce kept nice and warm. Ambiance was great also.

Stopped in on our way to Houston on a Saturday night. We chose brisket and sausage, and both were scrumptious. We were too full to eat the Barbara Bush Banana Pudding, but we brought it home with us. As we sat there eating, a band was playing toe tapping tunes. It was fun walking around looking at the photos and memorabilia on the walls of famous visitors. We plan to return another day.

I thought the barbecue was overpriced and the people were rude. 1st visit ever Won't happen again, they're the kind of people that don't care. I asked for a poor boy and they said they didn't know what that was. The barbecue was OK but not great.

Best BBQ in the area! We finally took a drive North to check out Hill Country and so glad we did. Thick and moist cuts, great flavor ... mmmmmmm, still thinking and talking about the great sliced beef sandwiches. Ready to go back very soon!

This is truly a hidden gem. The brisket was moist with a great smoked flavor. The potato salad was also delicious. Made with new potatoes, it was slightly chunky and creamy. The atmosphere is true hill country. Stop in and enjoy!

I saw it on the side of road and decided to stop in for some late lunch BBQ. I had brisket, ribs and sausage and everything was good. I really liked the sausage as it was more the meaty kind of sausage and not the mushy kind of sausage. The sides I had were green beans and the mac & cheese both were really good and the green beans had good flavor. BBQ sauce they have in the table is good as well and the price for what I had was pretty good. I would stop by again if I was driving along this stretch of road again.

Small, quaint little country place. I brought home ribs, brisket and sausage for the wife and I. Along with sides including potato salad, green beans and mac & cheese. Topped it off with their banana pudding. Everything was very good and I'm guessing even better if I had eaten it there instead of 2 hours later.

Delicious bbq! I got thr honey glazed ribs which were amazingly delicious, sweet and tender. The brisket super tasty with a delicious bark on it. The banana pudding is amazing too. The green beans needed some love, but overall the food was really good.

Loaded stuffed baked potato with brisket was outstanding. Provided bbq sauce put it over the top. Can’t wait to try the other menu items.

I do not know how this place has such good reviews cash register lady is very rude and dirty. Owner has a very bad attitude, serving cold food let alone hair in my food was upset when I asked to replace my sandwich that had hair in it and served me an ice cold baked potato lady’s hands were filthy and Owner had a very bad attitude. I will never return back to this place again and I highly recommend do that easier. Very bad establishment food was cold. They got upset when I asked to replace my order for a sandwich did not have hair in it and for a hot baked potato, they refused to heat it up and refunded my money very very, very poor service

Food was amazing! We got a potato w/ brisket and a side of sausage, and a brisket w/ sausage combo, we also got a large Mac and cheese and a large French fry, French fries were a tad greasy but so worth it I love the long cut fries they have. We spent around $50 could have fed 4 people with the amount of food we got! Service was very friendly made sure we had everything we wanted and when we were ready to leave made sure we had a bag to carry our leftovers out. Ambiance was fun, rustic and friendly.

Stopped at Hill Country BBQ on long way from Austin to Houston. Best ribs and brisket I've had in a long time. Love the rodeo and bull riding wall photos. Neat place. Will be back.

Chopped beef sandwich is so good you need to use a fork to catch all the goodness that falls out. Fried okra was fresh and not frozen.

After years of passing by we decided to try it today. Cool little restaurant. But I would not call the brisket and sausage we had BBQ. It tasted like it had been steamed cooked. No favor and served cold.

Best Sliced Beef Sandwich ever! BBQ sauce and coke slaw perfect too.

On the way to Fort Worth stopped in for the first time around closing time. Wife and I enjoyed best brisket ever! Dan showed us some pictures about his rodeo days and shared stories about roping hogs off horseback. Afterwards played a game of pool. Best experience ever in a resturant! Coming back to Texas in a few weeks and can't wait to enjoy more of Dan's brisket and hospitality.

We just popped in to try it because of the reviews online. It did not disappoint. The sliced beef sandwich was outstanding! The banana pudding was great! It’s a couple of miles off 290 but it’s well worth it. This will be a regular detour from now on.

Food was okay. Nothing to spectacular. A bit pricey for what you get.Brisket and ribs were bland. Mac & cheese tasted like it came out of a box. The fries were good and fresh. The sausage was the best part of the meal. We stopped because we were hungry and it was on the way, but it will be a skip for us next time.

Hard to review the place. I have been here 3 times and they are never open. The sign in the window says they are “suppose” to be open. Here again tonight on a Wednesday , 2 cars in parking lot, but doors locked tight. I shall never return.

Really great restaurant. We drove from college station and arrived 40 mins later than opening time. The owner is SUPER FRIENDLY and provides us BBQ. We will absolutely come again!

I would give 4stars but our last visit on Saturday, we were greeted with busy flies constantly that we had to cover our food as we were eating at the big table. We sat near the entrance and we noticed two big open trash cans by the door. We were constantly shooing the flies away because it keeps landing on the table and on us. All we want is to eat in peace, but it didn’t happened. The food was good. This was our second time here. We came back because we had a good experience last time. There were two other customers that was at dining during that time, but then there was a span of time that my family were the only ones in there. Surely the staff could have observed that those flies has been bothering us the whole time. I hope that during their down times they could make sure to kill those flies, or let it out. We might stop by again next time, but we have to make sure that those little busy greeters are not there, and they are still there then we me must continue on our way home.

The brisket is the worst I have had in the Texas. It's tasteless!! And even feels like not fresh. In addition, Some slices are too lean and tight, some are just so fatty. I don't understand why it has 4.8 stars.

I was running errands so i decided to stop in to buy a pound of brisket to take home. It was so good I bought 2 pounds. Yes brisket isn't cheap. There's was 25.90 a pound after tax But it is tender and not dry. I didn't even want barbq sauce because I wanted to taste the smoked flavor. I'm on a diet so I couldn't have beans or potato salad so I can't comment on those items I'm a 63yr old woman and even though I have a pit and can barbq myself.. With it being 100° outside.. I don't want to mess with it. LET ME SAY THIS I'm a Texas gal and I eat barbq 2-3 times a week. I'm not bashful about putting negative reviews on here if the food wasn't good. This food was delicious. Very tasteful without tons of seasonings to cover up the smoked taste. Smoked very well on a real pit Worth the money

The best thing on the menu was Barbara Bush's banana. I heard a lot about this place. Without the sauce,The meatWould not be acceptable.No taste. Pricie yes would it go back? No.

Horrible! Ribs are TOUGH! Brisket was lousy and along with the potato salad was very bland. Beans however were awesome! Had dog in building by kitchen and let a customer bring their personal dog, not service dog, in dining area while we were eating! The 2 plates in pics were $46+. Hate to post negative but if it was ever deserving it was here. Really regret passing the other 4 bbq joints in Hempstead for the "finest".

Amazing BBQ! So glad we stopped by! The fries were fresh cut and cooked right then and I had the best piece of buttermilk pie that I've ever had. The owner and employees were very personable and friendly and nice country decor including an incredibly large number of autograph pictures from famous patrons including George Sr and Barbara Bush who apparently were regulars there. (Next time I'm hoping they won't be out of the Barbara Bush Banana Pudding - come early in the day..as with most great Texas BBQ joints when they are out of food for the day they are out but we went around 4:30 and had plenty of everything else). Right on the side of Hwy 290 just out of Hempstead.

Food was good but they messed up a couple of items on our order (pork items when we don’t eat pork) and they just seemed annoyed and didn’t fix it. Not too welcoming if you’re “different.”

The food was excellent. Old town country feel. Extremely friendly service. Prices were very reasonable. Felt like home. Great job to the owner and team you made us feel welcomed. You must try it out!!! Worth the visit.
